Ingredients
Scale
- 1 lb fresh dry-packed scallops
- 4 tbsp unsalted butter
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Heat a heavy-bottom skillet over medium-high heat and add the unsalted butter.
- Watch for it to bubble beautifully, which indicates it’s ready.
- Add the minced garlic to the pan and sauté for about 30 seconds.
- Season the scallops generously with salt and pepper on both sides.
- Gently lay the scallops in a single layer in the hot skillet. Sear for 2-3 minutes on each side until golden brown.
- Carefully remove the scallops from the skillet and set them aside.
- Add the fresh herbs and drizzle in the lemon juice to the same skillet. Stir to combine.
- Drizzle the aromatic butter sauce generously over the scallops before serving.
Notes
For make-ahead preparations, store Cowboy Butter in an airtight container in the fridge and reheat before serving. Avoid overcrowding the pan when cooking scallops.
